
Sweet, sticky, slightly-smoky syrup!
We harvest the sap on a friend’s land, then haul it home and boil it outside over a wood-burning boiler. This is where the hint of a smoky taste comes from in our finished product. We love it. We hope you will too!

Gather it...
We put out 40 or so taps and the children so enjoy helping us gather the sticky liquid. I think they also enjoy visiting our friend and her menagerie of animals.

Haul it...
This was our biggest batch of sap by far in 2025….two food-grade totes full! We were so grateful when another friend loaned us his larger boiler so we could get through the sap faster.

Boil it...
We went through a LOT of wood this year boiling down lots of sap! The boiler needs to be refilled (with wood and sap) every hour or so. Thanks to Michael for doing the night “feedings”!
Did you know that it takes around 35 to 40 gallons of sap to make 1 gallon of syrup? It’s true.
I finish the sap on my stove in the kitchen, boiling it down the last bit into syrup. This requires careful watching or the syrup can boil over and then, well, it’s a very sticky mess. Ask my how I know. ;)
Last step: Pour very hot syrup into jars, cap, and put upside down to cool.

I found this recipe online and it’s become a favorite around here and with several friends who prefer healthier sweet treats!
Maple Syrup Cookies
1 cup melted butter
1 cup maple syrup
6 Tbsps. oil (we use avocado oil)
1 tsp. maple, almond or carmel flavoring
4 1/2 cups whole wheat flour (adjust as needed)
1 tsp. baking soda
1 tsp. salt
Mix all together. Dough should resemble a thick, peanut-butter cookie type of texture.
Put on pan in round balls and gently flatten. As you can see in the photo, we used a fun cookie press to make interesting designs.
Bake @ 350F degrees for 10 minutes. Cool and enjoy!
